Vineyard: Polydendri Domokos in Central Greece
Vinification: Cold extraction for 3-4 days, fermentation at increasing temperatures with native yeasts. Stay with the marcs for 22 days. Bottled unfiltered and released after 1 year in the bottle. Matured in French Oak Barrels for 6 Months
Tasting Notes: Dark garnet color with crimson hues. Expressive and complex aromas of prunes, sour cherries and dried raisin, along with notes of smoke, vanilla and dark chocolate. Dense and elegant with soft tannins and long herbaceous aftertaste.
Paired With: Red meat cooked or BBQ, game, pasta with red sauce, smoked cheeses, charcuterie
