Vineyard: Several parcels of non-irrigated, young vines around the village of Fytia in Naoussa.
Vinification: Grapes are hand-picked, destemmed, macerated for 12 hours, fermented with wild yeasts in stainless-steel tanks for 5 to 6 months. Maturation for 4 months in 500-litre, second-use oak barrels.
Tasting Notes: Soft salmon in appearance. Expressive on the nose, with aromas of cherry, strawberry, tomato and light hints of rose. On the palate, red fruits and a slightly spicy character, while crisp acidity and soft tannins add complexity and lead to a lingering finish.
Paired With: Grilled fatty fish, white meat, mediterranean dishes, pasta with red sauce
Enjoy it at: 10–12 °C.
