Varietal: 100% Sauvignon Blanc.
Sauvignon Blanc is one of the most popular green skinned grape variety. The grape gets its name from the French word sauvage (“wild”) and Blanc (“white”) due to its early origins as an indigenous grapes in France. Sauvignon Blanc is a grape that thrives in all types of limestone-based soil. It is just as happy in hard chalk or softer marine sediments known as marls.
Made from grapes harvested in the Southern France’s Languedoc region.
Vinification: Fermentation takes place at low temperatures in order to preserve all of the grapes’ aromas and flavours. The wine is then aged for a few months on fine lees.
Tasting notes: Golden, pale straw yellow in colour. Very fine and mineral nose with notes of fresh fruit. The palate starts off bold and very elegant. Soft and delicate in the mouth with perfect acidity lasting though to the finish.
Food and wine pairing: Serve chilled, on its own as an aperitif, or paired with scallops, mussels, oysters, grilled fish, sardines, or goat’s cheeses.
