A violent mass of people destroyed a lifetime's worth of work in 1835 and looted the order as part of the events that would later end in the "Ecclesiastical Confiscations of Mendizábal". The Torres family began planting vineyards on licorella slopes in 1996. The Central Priorato has a soil known as "licorella" which is unique to the region. Comprised of dark-coloured slate among areas of quartzite, it is poor volcanic soil yet rich in minerals.
Tasting notes: An intense nose that reveals the passage of time. A predominance of spiced notes (licorice, curry, chocolate) along with plum and blackberry jam, accompanied by a hint of chamomile tea, toasted dried fruit and nuts. Very sweet upon entry, giving way to a very concentrated, fresh palate and ending in a long, elegant finish.
Food pairing: Perfect as an aperitif paired with blue or creamy cheeses. Also a good match with duck confit. Truly surprising when combined with either chocolate coulant or mousse or with wine poached pears.
