Cultivation: This variety is grown in linear vineyards, planted on slightly inclined soil up to an altitude of 250 m. They have a North and South exposure which provides better growing conditions for the grapes.
Vinification Method: We perform the skin contact method, while the fermentation temperatures differ according to the plot, in order to obtain the aromatic potential of the Sauvignon Blanc variety. It matures for at least 6 months in selected oak barrels, so as to avoid the premature aging of the aromas. At the same time, we perform batonnage with fine wine lees.
Tasting Notes : Shiny golden yellow colour. A nose of white blossom, citrus fruits and freshly cut grass. Wine with impressive body and reach volume. In the mouth the development is striking with variations of melon, papaya and passion fruit. Long aftertaste of freshly ground coffee and brioche.
Aging: Will respond to aging for up to 4-5 years after harvest.
Perfect Pairing: An excellent match for seafood, oily fish, smoked salmon, white meats and poultry.
