Vinification: Late harvest, long maceration of 8-10 weeks, maturation in oak barrels for at least 18 months.
Characteristics: Bright ruby red colour. Aromas of tomato, ripe wild cherry, blackcurrant, figs and dried plums, with hints of coffee and spices. Tight, lively flavour, with rich tannins and a complex aftertaste.
Pairing: Fatty yellow cheeses, smoked sausages and grilled meats, game, country sausages.
