As far back as 1770, the monks of the Montserrat abbey carried out their penance at the Desterrats estate. The area was known for its extreme climate and harsh conditions. Their task: working the land to provide food for the diocese. Their legacy: discovering a new terroir and a superlative wine. The legend: Enormous barrels vanishing mysteriously. Some said it was the angels taking them to heaven...
Vineyard: Costers del Segre. Very deep, well-drained soils with a moderately fine texture. The surface is not stony or gravelly and is dark yellowish-brown in colour. This soil has a low organic matter content and a very high calcium.
Vinification: The skin contact lasted for 10-15 days. The alcoholic fermentation was held in stainless steel tanks. Then the malolactic fermentation took place in barrels. The fermentation lasted around 7-10 days at 22°C. The wine aged in oak barrels for 15-18 months (40% new French oak from Nevers).
Tasting Notes: Extraordinary dark cherry red color with great depth. Intense floral like violet and fruit aroma especially cassis with exquisite Mediterranean thyme coming through, joined by notes of smoke and spices (cocoa). Full and intense on the palate, with ripe, velvety, wonderfully elegant tannins. An exceptional wine, flavorful and full bodied, with a characteristic, terroir-imparted hint of minerality (graphite).
Paired with: Lamb, beef and pasta with red sauces.
Served at: 16 - 18°C.
Aging potential: For the next 10 years from the harvest.
