Vineyard: Clayey and calcareous-sandy. Altitude from 0 to 150 metres above sea level. The climate is Mediterranean, with mild winters, limited rainfall, very hot and stormy summers.
Varietal composition : Blend of native Sicilian white grapes Grillo and Malvasia.
Vinification: Traditional early harvest, which begins in the first ten days of August in the early hours of the morning. Soft pressing and fermentation at a controlled temperature. Maturation in temperature-controlled cellar and in bottle for 2 months.
Tasting notes: Straw yellow colour with greenish reflections.The nose is intense and characterized by strong aromas of pear, floral notes of orange blossom and jasmine.The taste is dry, fresh and balanced, with a medium body and a pleasant aftertaste dominated by floral elements.
Pairs with: All fish dishes, from boiled octopus to fried fissh, pasta with vegetables and vegetarian Mediterranean dishes.
Enjoy at: 8-10°C.
Ageing: 3-5 years.
