Vineyard: Drisbey in the valley of Atalanti in soils mainly of clay and calcareous origin. Altitude: 250 metres.
Vinification: manual harvesting and classic red vinification. Maturation in French oak barrels lasts 12 months.
Tasting notes: deep purple colour. Aromas are of predominant black stone fruits, black pepper, leather and sweet spices such as cloves & cinnamon. Complexity on the palate, with fruit on the nose being asserted, notes of jam, sweet spices but also a hint of mint. Round body of medium intensity with mild acidity, firm tannins and a long piquant finish.
Pairs with: grilled meats, mushroom fillet with black pepper sauce, pork chops, with barbecue sauce, spicy cold cuts and yellow cheeses.
Enjoy at: 16- 18ºC
Ageing: it will evolve beautifully for a mere decade.
