Vineyard: The vinyard is located at Salento, in the region of Puglia, south Italy. The vinyards are extended for 1 km in the seashore of the Adriatic sea.
Vinification: The grapes were selected manually, destemmed delicately, and given a soft pressing. The must which went into stainless steel tanks at a temperature of 50° Fahrenheit (10° centigrade) to assist a natural settling of the impurities. The fermentation which then followed took place at a low temperature, 61° Fahrenheit (16° centigrade), to preserve to the maximum extent the primary aromas. A brief aging period in stainless steel tanks and a four month period of bottle aging preceded release.
Characteristics: A pleasant wine with aromas of roses and jasmine. In the mouth it is fresh, it has a refreshing acidity and also it is well balanced. Red fruits dominate, such as strawberries and roses.
Paired with: Grilled fish, pasta with tomato of fish, vegetable risotto and a variety of cold cuts.
Served at: 8-10ºC.
